The aromatic vinegar is a subtle balance between the sweetness of apple vinegar aged in oak barrels and a selection of aromatics and berries from the region of production.
The method used, called Orleans and one of the oldest used in France by the acetic fermentation produced by wine yeasts.
This mild and balanced vinegar will be used to prepare aromatic vinaigrettes, hot sauces for white meats, poultry and game.
Deglazing meat or fish dishes by using their juices, will enhance the flavours of herbs and ingredients for the creation of bases and sauces.

Established in the Basque Country, the vinegar factory of Saint Jacques was born from the desire of one man, passionate about gastronomy, to change his professional life.
