Why choose a silicone mould over other types of mould?
Chef Philippe: Silicone is a light, flexible material with non-stick properties, which therefore allows very easy mould release. No need to grease the mould. It can be used both in freezing and baking, while respecting a maximum temperature which may vary from one brand to another.
How to choose a silicone mould?
Chef Philippe: Avoid all indicating that they generally withstand a temperature of up to 230°C to 240°C. Favour Silicone moulds which resistance to a higher temperature, from 260°C to 280°C. Of course, you won't be using your moulds at such high temperatures, but that's just a GUARANTEE of quality.
Why is the Flexipan® silicone mould better than the others?

Can we use a silicone mould for all pastries?
Chef Philippe: Yes, prefer a silicone mould for individual preparations, for all individual dishes and small cakes. Also for any savoury dishes. For large cakes, prefer springforms with hinges to consolidate the mould and avid any disappointment when filling or baking.

Quenelle mould and Quenellestory
Salty quenelle, made from poultry or fish are well known. They exist since the Romans' time. They ate a paste made from eggs and fish cooked in boiling water.
The recipe for the Quenelle Lyonnaise appeared around 1830. A master pastry chef, Charles Morateur, associated the fish flesh, which swarmed in the Saône, with choux pastry and beef fat. The first Quenelles lyonnaises were born. Customers lined up in the pastry shops, bringing their pots to collect dumplings and sauces.
Later, Joseph Moyne, son of a butcher, decided to rework the recipe for the Quenelles lyonnaises by replacing the beef fat with butter, thus making it lighter. He gave them the final elongated shape that we know today.
Today there are many savoury Quenelles but some sweet as well. In this case, they have only the shape of the original Quenelle.

Florentine mould and the history of the Florentine
Its name reminds you of Italy and the beautiful city of Florence. However, the Florentine is of Breton origin. A master pastry chef officiating for the house of the Medicis in Florence, came to Brittany under the reign of Louis XII, husband of Anne of Brittany, and produced the Florentine.
