The name "Quiche" is derived from the Lorraine name "Küche". At the time, it wasn't made from shortcrust pastry, but from leavened dough, like bread dough. Ingredients that were available in the village, eggs, cream and bacon we added. Much later the shortcrust pastry became the basis of the Quiche.
Quiche Lorraine has kept its original recipe, shortcrust pastry filled with smoked bacon and a batter called "migaine", baked in a Quiche mould. Millasson is a cake that comes to us from Limousin, the great South-West of France, Pyrenees, Hauts de Garonne, Nestes. Its name is derived from Occitan word "milhassou" meaning "corn flour pancake".
Originally millasson or millas was prepared with millet, hence its name. Nowadays, millasson is made with corn flour and orange blossom. The millasson has a particularity, it is a magic cake. Pasteis de nata are small cakes, a kind of custard, of Portuguese origin. Pastel de nata, in the singular, Pasteis de nata in the plural, is made from puff pastry and cream, baked in a flared mould.
Pasteis de nata are also called "Pasteis de Belém". In 19th century, Belém and Lisbon were two different areas linked by steamboat. In Belém was a monastery where the nuns made small custards, called Pasteis de Belém in a Pasteis de nata mould. These pastries were then sold by monks in a shop near the monastery. At the time, the monastery attracted many tourists who loved to taste these Portuguese wonders.
Today, only a pastry shop located in Lisbon, Fabrica dos pastéis de Belém sells the famous Pastéis de Belém. Its recipe has been well kept for years and the master pastry chefs have taken an oath of silence around the recipe. Belém pastéis are still hand-crafted and customers sometimes wait several hours to eat them.
