With a similar flavour to nutmeg, mace delivers more delicate, subtle aromas with sweet pine notes.
Mace pairs well with delicate fish, poultry, chocolate desserts, certains fruits (peach, apricot) or macerated drinks such as sangria.
This versatile spice can be used crushed, ground, whole for infusion or in association with other spices such as white pepper, cinnamon and star anise.
