Similar to cloves in appearance, cinnamon buds are the unopened flowers of the cinnamon tree: they are picked just before blooming and dried in the sun afterwards.
Cinnamon buds release beautiful scents of coffee and cocoa. In the mouth, they deliver incredibly warm aromas.
Like cinnamon powder or sticks, the buds can be used for sweet or savoury preparations, spice blends and asian or Middle-East recipes.
Infused or ground for pastry preparations, pricked in poached fruit or blended with other peppers... there's so much to experiment with cinnamon buds!
