Main ingredients: For this recipe, I used vacuum-packed whole chestnuts, ready to use.
You can also use whole chestnuts in a jar.
Place the chestnuts in a mixing bowl.
Cooking juice: Pour the chicken stock paste into a saucepan.
Add the water...
...while mixing with a whisk.
Add the thyme sprigs and the bay leaf.
Bring everything to a boil, then take the pan away from the heat.
Main ingredients (continued): Melt the butter in a pan.
Add the whole chestnuts...
...and stir gently with a spatula until they coated with melted butter.
Pour the cooking juice over the chestnuts.
Add the bouquet garni.
Season with fine salt...
...and freshly ground pepper.
Let simmer on low heat for about 10 minutes (the chestnuts will crumble if you cook them longer). Once done, drain the chestnuts.
Plating: This is only a presentation idea, feel free to plate it differently.
Scoop some sweet potato mash onto a plate and arrange a few chestnuts in the centre.
Sprinkle a bit of crushed paprika...
...and some chopped flat parsley for decoration.
