Preparation of cream rolls:
Wrap puff pastry strips around the cone tube, from bottom to top. Make sure the pastry strips overlap. Brush with egg yolk and sprinkle with Codineige sugar. Bake the pastry shells, then set aside to cool. Release the pastry shells gently from the cones, then fill with cream, using a piping bag.
