This very soft and little sweet white chocolate has a creamy texture and a powerful whole milk taste. 100% pure cocoa butter.
Perfectly suited for molding, dipping or coating sweets in confectionery, pastry (cream, mousse) and all decorations.
Also ideal as a base for colored glazes.
The size of the "Pistols" (+/- 2g) makes your life easier for practical dosing, faster melting for simplified crystallization.
After use, a gesture to close, the product is safe and does not undergo any alteration.
For quick and easy crystallization:
In a tempering machine or in an oven, melt the couverture at 40°C. Once melted, stir in about 1/3 of the unmelted couverture. Mix with a spatula.
This will lower the temperature to 26°C which is the ideal temperature for the use of the blanket (the temperature of the blanket must be maintained at 28°C throughout the work).
Microwave oven: follow the same method in a suitable container. Quick technical attention but requiring great vigilance during melting.
