Before starting this Hazelnut Financiers recipe, make sure you have organised all the necessary ingredients.
In a mixing bowl, pour the ground hazelnuts.
Add the icing sugar...
... then egg whites and flour.
Mix with a wooden spoon.
Add the melted butter.
On a perforated baking sheet, place a mould with diamond shapes or a financier mould. Using a piping bag, pour the mixture into the cavities. Place a whole into each cavity.
Preheat the oven to 180°C (gas 4) and bake for 15 minutes.
The financiers are ready when golden and puffed up.
Remove from the oven and leave to cool. Remove the financiers from the mould. Financiers are perfect biscuits to make café gourmand.
