Before starting this Gingerbread Men Cookies recipe, make sure you have organised all the necessary ingredients.
Place the butter in the stand mixer recipient, and soften it with the flat beater.
Add the castor sugar...
... and a few drops of vanilla extract.
Add the spice mix...
... and the flour. Combine until the consistency is crumbly and homogeneous.
Add the liquid honey.
Resume mixing for a few seconds.
Remove the recipient from the mixer...
... and transfer the dough onto your kitchen worktop.
Shape the dough into a ball. The consistency should still be crumbly.
Using a rolling pin, roll out the pastry to a thickness of 1 or 2mm. It is essential that you roll out the dough immediately, while it is at room temperature. Do not refrigerate the dough!
Using a gingerbread man cookie cutter, cut the pastry into man-shaped biscuits.
Place the shapes on a non-stick baking sheet (40 x 30cm).
Using a brush, apply some egg yolk glaze on each biscuit. Be careful not to brush it on too thickly, or it can dribble down the sheet.
Bake at 150°C (gas 2)...
... for about 25 or 30 minutes. When cooked, remove from the oven and leave to cool. Enjoy!
