Dark chocolate cremeux from Ancel is ready in a few minutes.
Easy to use, this preparation makes a firm and melting cremeux or a light and creamy mixture to whip up.
Without colouring agents, palm oil and gelling agents of animal origin, Ancel has opted for a healthy product that respects nature.
With 80% chocolate, this cremeux will bring a real cocoa flavour to your dessert.

1 kg pouch can make 6 kg of chocolate cremeux.

  • Shelf life: 18 monts from production date.
  • Store away from direct light and heat in original packaging.
  • Ingredients: 40% chocolate (sugar, cocoa mass, cocoa butter, emulsifier (sunflower lecithin) cocoa beans, sugar beet, 40% chocolate powder (sugar, cocoa) sugar, modified tapioca starch gelling agent (carrageenan)

In a saucepan, bring the desired volume of liquid cream to the boil and then add about 1/5th of the volume in mixture.
Mix with a blender until smooth and if necessary, use a hand whisk to loosen the mixture before pouring it into the desired mould.
If you want a fluffy cremeux, follow the same process, then lower the temperature to 0/+4° before beating the mixture with a high-speed blander for a smooth cream.
This mixture can be used in a piping bag.
