Easy to use, this preparation makes a firm and melting cremeux or a light and creamy mixture to whip up.

1 kg pouch can make 6 kg of chocolate cremeux.
In a saucepan, bring the desired volume of liquid cream to the boil and then add about 1/5th of the volume in mixture.
Mix with a blender until smooth and if necessary, use a hand whisk to loosen the mixture before pouring it into the desired mould.
If you want a fluffy cremeux, follow the same process, then lower the temperature to 0/+4° before beating the mixture with a high-speed blander for a smooth cream.
