The natural colour of the sugar comes from sugar cane, with the presence of plant extracts giving it a more or less amber color and a taste with hints of caramel. Vergeoise (also known as brown sugar in Belgium) is an unrefined sugar made from the residual syrup left after sugar crystallization. It has a darker colour, similar to cocoa, and a stronger flavour.
