Description

Acaïou dark chocolate is made from pure Côte d'Ivoire cocoa beans.
It offers intense flavour with a pleasant bitterness, balanced by roasted cocoa notes.

Versatile and easy to work with, this couverture has good fluidity and delivers consistent results.
Its distinctive character brings depth to mousses, ganaches and creams, showcasing the quality and expertise of Swiss chocolatier Villars.

You may notice a slight printing flaw on our lovely packaging.
As part of our eco-conscious approach, we chose to use them rather than waste them.

  • Temperature curve: melting point 43-46°C - crystallisation point 25-26°C - working temperature 30-31°C).
  • Ingredients: cocoa paste (Ivory Coast), sugar*, cocoa butter, rapeseed lecithin, natural vanilla flavouring. (*Ingredients of Swiss origin)
  • Storage: Store in a dry place (humidity below 60%). Temperature between 16°C and 18°C. Protect from light and odours.

The same philosophy applies to the sugar, which is 100% sourced from beet grown in Switzerland. As for the cocoa beans, they are sourced in Africa or South America. All this to obtain genuine Swiss chocolate.
