This dark couverture chocolate is made from beans grown in Saint Vincent and the Grenadines by a group of local farmers on small farms of less than two hectares.
Cocoa production in this small country declined in the 1970s in favour of bananas, but has since been revived, along with the production of ginger and other local roots.
This 75% Kalinago dark chocolate (representing the people of the Lesser Antilles) is quite lively with notes of citrus, passion fruit, floral honey and cashew nuts, ending with a touch of saffron.
