Ingredients for 8:

Hazelnut rich shortcrust pastry (steps 1 to 20): (make the day before)
140g type 55 flour
100g softened butter
50g icing sugar
50g raw hazelnut powder
1g fine salt
45g egg yolks
4g baking powder
Soft salted butter caramel (steps 40 to 55):
150g whipping cream, 35% fat
1/2 Bourbon vanilla pod
15g glucose syrup
80g caster sugar
1g Guérande fleur de sel
35g cold butter

Addition to the salted butter caramel (steps 56 to 60):
40g whole shelled hazelnuts
20g whole blanched almonds
Chocolate ganache (steps 61 to 65):
160g whipping cream, 35% fat
110g Guanaja 70% dark chocolate
Finish (steps 67 to 69):
50g Dulcey 35% blond chocolate
A few caramelized hazelnuts
1 tsp cocoa nibs
Shimmering gold food coloring
