Awarded the Silver Epicure Award 2021, Max Daumin's Yupanqui black pepper is a unique variety from the Manabi region of Ecuador. It is produced by a lineage of Inca farmers who have cultivated these crops for three decades. Renowned as one of the most potent peppers globally, it features a multifaceted flavour profile that interweaves notes of eucalyptus, mint, camphor, cocoa, orange, and cinnamon cassia.
The journey of this pepper begins with hand-picked green peppercorns that are boiled and then air-dried. Natural oxidation during this process gives the grains their characteristic black colour. Upon tasting, an intense warmth develops after a few seconds, unfolding into the vibrant, fruity flavours of wild mango and ripe orange.
This unique pepper acts as a powerful flavour enhancer for meat, fish, and vegetables, providing a depth and heat that is distinct from traditional varieties.
To fully experience its intense aromatic hints and warmth, the pepper should be used as a fresh seasoning. For optimal flavours, grind this pepper over your plate just before serving using a dedicated pepper mill.
