Sosa Ingredients' Bubble is an innovative texturiser used to create edible bubbles. Designed for chefs and pastry chefs, it adds an original and elegant visual touch to dishes, desserts and cocktails.
It is a powdered mix made from egg white (albumin) and xanthan gum. This combination gives it a high aerating power, enabling it to transform a liquid into stable, light bubbles.
Unlike a traditional mousse, Bubble creates distinct, individual bubbles, creating a unique visual effect.
Applications:
Bubble is used with aqueous liquids such as juices, broths or infusions.
To use it, simply mix it in (approximately 20-23 g per litre of liquid), then remove any unwanted air bubbles before generating the bubbles using an aeration system such as a Foam Kit.
After a few minutes to stabilise, the bubbles can be collected and gently placed on top of the preparations.
Bubble allows you to create light, airy decorations, whilst adding a subtle flavour that can be customised depending on the liquid used (honey, beetroot, cocoa, herbs, etc.).
It works equally well with hot or cold liquids and offers good stability, although the bubbles should ideally be used quickly to maintain their optimal appearance.
