It binds aqueous and fatty phases, stabilises and thickens sweet and savoury preparations.
This powder can be used hot or cold.
The recommended average dose is 10 to 15g per kilo of preparation.
Applications: eggless mayonnaise, mousses, creams, ganaches, beaten pastes, fermented pastes, ice creams and drinks.
