Description

Sucro Emul is a powder produced by the esterification of fatty acids and sucrose.
This food additive enables the preparation of very light creams, such as espumas.
It can be used in both cold and hot applications with all types of liquids.
The recommended average dosage is a maximum of 5 g/kg.
Sucro Emul facilitates the incorporation of air into many types of preparations, from whipped batters to mousses and ice creams.
