Description

Glicemul is a plant-based emulsifier composed of mono- and diglycerides of fatty acids, specially designed to act on fats and alter their texture.

The main function of this product is to raise the melting point of fats. In practical terms, it transforms a liquid fat, such as an oil, into a more stable, semi-solid or even solid texture.
This opens up numerous possibilities in the kitchen, particularly for creating textured oils, firmer dried fruit pastes, and so on...

For example, it can be used to stabilise dried fruit butters, prevent fats from separating in certain preparations, or create innovative textures in fine dining.
It can also be used as an anti-hardening agent in certain pastes or as a stabiliser in products such as nougat.
Glicemul is distinguished by its neutral taste and unobtrusive nature, allowing it to be easily incorporated into various recipes without altering the flavours.

Applications:
Glicemul is always used in a fatty medium, as it is fat-soluble.
It must be incorporated whilst hot, generally at temperatures above 60°C, to dissolve properly. Once cooled, it acts to stabilise and structure the processed fat.
This process is thermoreversible, meaning that the texture can change again with temperature, an advantage for both hot and cold applications.
Recommended dosage: 30-60 g/kg
