15g lemon juice
Cookie dough (steps 9 to 28):
160g softened butter
200g brown sugar
40g caster sugar
40g dark vergeoise sugar
20g smooth 70% pistachio praline
75g whole eggs
4g fleur de sel
320g T55 flour
3.2g baking powder
100g whole shelled pistachios

Caramelized pistachios (steps 29 to 34):

Raspberry confit: To make these pistachio and raspberry cookies, start by preparing all the ingredients for the raspberry confit.

Pour the raspberry purée and half of the caster sugar into a saucepan and heat.
