Arrange the flour in a well in a mixing bowl. Pour the fine salt and 2 tablespoons of olive oil into the centre.
Add the water, previously brought to a boil, while it is still hot.
Mix well with a spatula...
...until a soft and homogeneous dough is obtained.
Shape the dough into a ball...
...and let it rest for 30 minutes on the work surface, covered with a tea towel.
Divide the dough ball into 4 equal parts.
Shape each ball in the palms of your hands.
Roll out the dough with a rolling pin...
...forming a disc as even as possible.
Preheat a non-stick frying pan.

...and cook for 2 to 3 minutes...
