Prepare all the ingredients
Place parchment paper on the bottom of the sheet . It will prevent water splashes during cooking.
Butter the ramekins (ex: vegetable mousse). In some cases, there is no need to butter the ramekins (ex: crème renversée).
Place the ramekins on the sheet and fill them with the mixture of your choice.
Fill the sheet with water half way. Bake for required time.
When finished, remove the ramekins from the bain-marie (sheet), wipe the bottoms and leave to cool.
