Blanch the potatoes in salted water (starting with cold water).
Drain them well...
...and toss them while warm into a sauté pan containing your boiling oil.
Brown evenly by stirring from time to time.
When finished, remove the excess oil then add a nice knob of butter.
Add fine salt. Serve very hot.
