  • Sourdough* - day 1 (steps 1 to 8):
  • 75g lukewarm water
  • 4g fresh baker's yeast
  • 2g fine salt
  • 100g T45 flour
  • Panettone dough - day 2 (steps 9 to 49):
  • 20g fresh baker's yeast
  • Sourdough (prepared the day before)*
  • 350g of T45 flour
  • 95g caster sugar
  • 1 small teaspoon of liquid vanilla (or vanilla powder)
  • 7g fine salt
  • 6 egg yolks
  • 125g lukewarm milk
  • 150g softened butter
  • 40g rum
  • 1 lemon
  • 1 orange
