Place the oyster into a thick cloth folded in 3 or 4. This is to avoid hurting yourself. Drive the knife into the joint of the point of the shell.
Force and slightly turn the blade of the knife in an up and down movement to separate the two shells. Slide the blade on the right side to slice the " nerve" of the oyster.
At this point, the shells will easily separate from each other. Lift and scrape the top to remove the flesh that will remain on the bottom shell. Place on a serving dish.
