Prepare all the ingredients
Mince carrots and onions
Place them in a stockpan. Add salt and peppercorn.
Add gradually cold water...

Add thyme, bay leaves and bring to a boil.
Leave to cook for about 20 minutes before plunging the item to be cooked.
Leave to simmer 8 to 10 minutes.
