Before starting this Courgette Flan recipe, make sure you have organised all the necessary ingredients.
Peel the courgettes, then cut into small cubes...
... and sauté in hot olive oil, in a non-stick frying pan.
Add the garlic, peeled and crushed.
Season with salt and pepper.
Wash the bunch of herbs and drain.
Finely chop with a knife...
... and add to the courgettes while cooking.
In a mixing bowl, tip the whole eggs and egg yolks.
Add the crème fraîche...
... and the milk.
Add some nutmeg, then season with salt and pepper. Combine with a whisk.
Add the sautéed courgettes to the preparation.
Pour the preparation into 4 gratin dishes, slightly greased.
Bake at 150°C (gas 2) for 40 to 45 minutes. Use a knife to check whether the flan is cooked. For greater results, cook in a bain-marie at 180°C (gas 6).
When cooked, serve either hot or cold, with tomato sauce.
Alternative version: Dice a red pepper and sauté together with the courgettes (reduce the quantity from 400 to 300 grams).
