Before starting this Scallop Carpaccio with Mango and Passion Fruit recipe, make sure you have organised all the necessary ingredients.
Clean and trim the scallops. Separate the corals from the scallops.
Thinly slice the scallops...
... and arrange gently on a serving plate, which has been stored in the fridge beforehand.
Arrange the corals as well.
For the marinade: Squeeze the lime.
Pour the juice into a small bowl.
Add an equal amount of olive oil.
Season with salt and pepper. Stir with a fork.
Cut a large slice from the mango and peel.
Cut the flesh mango into a brunoise.
Add the diced mango to the marinade preparation.
Add the inside of 2 passion fruits (juice and seeds).
Add some finely chopped dill (the equivalent of one tablespoon).
Using a brush, coat the scallops with the marinade, making sure to evenly spread the mango dices...
... and passion fruit seeds on the plate.
Finish by sprinkling a few pink peppercorns and sprigs of dill. This delicious starter is best served really cold!
