Slice the onions. Cut the red and green peppers into strips. Dice the courgettes and aubergines.
Blanch the tomatoes, then peel and take the seeds out. Cut into small dices.

In a saucepan, sweat the onions and peppers in olive oil.
Add the courgettes, aubergines and tomatoes.
Season to taste.
Add the bouquet garni and the chopped garlic.
Cover the saucepan with a lid, then cook for 20 minutes. When cooked, remove the bouquet garni and add the chopped basil. This dish is delicious either served hot or cold.
