Before starting this Chicken Salad recipe, make sure you have organised all the necessary ingredients.
Cut the cold chicken in half.
Remove the skin and bones...
... then cut the meat into big chunks.
Cut the 4 tomatoes...
... into quarters.
Cut the green and red peppers into thin strips.
In a frying pan, sweat the peppers with 20ml of olive oil (one tablespoon).
The peppers should be tender but still crunchy. Season with salt and ground pepper.
Remove the stems from the watercress, then sprinkle the leaves over the chicken.
Mix together the olive oil, vinegar, salt and pepper...
... and pour over the chicken. Squeeze the lemon and add the juice to the chicken.
Arrange the tomato quarters, pepper strips and black olives on top. This delicious salad is now ready to serve!
