The queen spice in India, green cardamom grows in hot and humid conditions, in the forested hills of the Kerala province and the Malabar coast range.
Green cardamom delivers a warm, aromatic fragrance with lemony eurcalyptus notes and a little camphor. The seeds are extracted from the green cardamom pods and release their flavour faster.
Cardamom is a common ingredient in many Indian recipes (with poultry especially).
It also pairs really well with pastry preparations containing fruit.
Keep away from direct light and humidity.
Close the lid after each use to ensure the tub is airtight.
