These iyokan peels are crystallised but not candied.
Iyokan is a Japanese citrus fruit, a speciality of Ehime Prefecture, resembling a small orange.
The iyokan peels are slowly cooked at a low temperature, then dried and sweetened. This rigorous two-day process gives it a soft but dry, non-sticky texture and softens the bitterness of the zest, developing only a delicate flavour of mandarin, orange and grapefruit.
It is delicious in savoury dishes, pastries and even confectionery.
Uses:
Sweetened iyokan peel can be used as a topping on desserts, cakes and muffins, in exotic recipes, or coated in melted dark chocolate to make treats such as orangettes!
They can also be placed directly on a king's crown cake to add a touch of originality.
