Original seasoning of salt and candied black garlic.
The garlic used is organic purple garlic from the Falces region in Navarre. It is then slowly candied at low temperature for several weeks in a humid environment.
The result is ebony-black cloves with a soft, melt-in-the-mouth texture and the mild flavour of a bitter-free, slightly sweet garlic.
Combined with salt, this seasoning accompanies white meat, poultry and fish dishes.
In the Basque Country, Navarrese people like to put a pinch of it on some vegetable and cold meat tapas.
