Make a mayonnaise with the mustard...
... egg yolks, oil, salt and pepper.
Add a dash of vinegar to soften the mayonnaise if necessary. Adjust the seasoning if needed.
Add the mayonnaise to the grated celeriac.
Combine gently. Reserve in the fridge. Bon appétit!
