Every restaurant, bistro or Basque family has their own version of Xipister, but the basic ingredients always remain the same (Espelette pepper, vinegar, oil and garlic) to create this quintessential condiment.
Xipister will add a little lift to grilled fish, meat and poultry. It is also great drizzled over vegetables, rice or pasta.
