Ugandan vanilla pods offer a distinct flavour profile compared to traditional Tahitian or Madagascan varieties.
Less sweet and creamy than Madagascar vanilla, they are slightly more full-bodied, with woody, powdery notes and subtle hints of caramel and cocoa.
These Planifolia pods are perfect for flavouring creams, ganaches, milk-based desserts, and pastries.
They can also enhance refined savoury dishes such as fish, scallops, duck breast, or prawns with aromatic depth.
Directions for use:
Cut the vanilla pod lengthwise and scrape out the seeds with the tip of a knife. Add both seeds and pod to a liquid preparation (approximately 1 pod per litre).
Gently heat to 70°C for 20 minutes, then allow to cool. For a more intense flavour, leave the mixture to infuse in the refrigerator for 24 hours.
