Agrimontana's lemon cubes are obtained by cutting quarters of candied lemon peel after a slow candying process aimed at preserving their essential oils.
These lemons come from Sicily and Calabria, in southern Italy, and are used in a variety of preparations, including yeast doughs, cheesecakes, travel cakes, and regular cakes, as well as for marbling in ice cream.
Sicilian lemons are considered true treasures, treated with passion and delicacy by Agrimontana. The fruits are immersed in a mixture of water and sugar syrup, then subjected to slow candying at low temperatures, under the watchful supervision of Agrimontana's confectioners, who pass down their expertise from generation to generation. The result is carefully drained cubes of candied lemon peel.
These lemons are harvested at the optimal time to ensure 8 x 8 mm cubes that are tender and melting, thanks to Agrimontana's craftsmanship. This candying method yields fruits with exceptional flavor and remarkable texture.
