The 64% organic Ceiba dark pastry chocolate is a low-sugar couverture made from beans from the Dominican Republic.
It develops a significant strength in attack, thanks to the association of a powerful bitterness and a beautiful acidity. Dark Ceiba chocolate develops a good length in the mouth.
The dark Ceiba couverture chocolate then rounds out to reveal woody and yellow fruit notes.
Very fluid and easy to work with, these 2 g pistoles will melt easily and will be dosed to the nearest gram.
The use of Ceiba is multiple and varied. It is worth considering the taste characteristics of this great chocolate. It will make it possible to produce delicious ganache, mousses, decorations or ice creams.
