Description

Sosa trehalose is a natural sugar used in baking and professional cooking for its unique technical properties.
It is distinguished by its moderate sweetness (approximately 40 to 45% that of sucrose).
It therefore adds a slight sweetness without masking other flavours, making it particularly useful in preparations where aromatic balance is essential.
In addition, it has a stabilising effect on preparations, slowing down the drying out of products.
Trehalose therefore improves texture, preservation and taste.

Applications, dosage:
Can replace 10 to 30% of traditional sugar in recipes.
Ideal for making ice cream, spun sugar, bubble sugar or vegan desserts.
In certain preparations such as dry meringues, up to 100% of the sugar content can be replaced.
