Oligofruct by Sosa Ingredients is an ingredient used to reduce sugar content whilst retaining the sweetness and texture of food preparations.
It is a natural soluble fibre extracted from chicory root, consisting of 100% oligofructose.
Oligofruct has a sweetness of around 50% compared to conventional sugar, which allows the sugar content to be reduced whilst maintaining a certain level of sweetness. It is also rich in fibre.
It also has an anti-crystallisation power (ACP) of around 45%, which is particularly useful for ice creams and sorbets, where it helps to improve creaminess and texture.
It helps to preserve the softness of baked goods, maintain the creaminess of creams and ice creams, and stabilise textures after freezing.
Applications:
Suitable for use in both cold and hot applications.
Ideal for meringues, mousses, creams, ice creams, sorbets and cake batters, with varying dosages depending on the application (approximately 5-20%).
Furthermore, it performs very well in acidic environments, making it compatible with fruit-based preparations.
