Maltosec is a 100% natural texturiser made from tapioca maltodextrin.
It is used in cooking to transform fats into a fine powder, thanks to its high capacity to absorb fats and oils.
When mixed with a fat (oil, melted chocolate, praline, etc.), it instantly transforms it into a light, dry powder that is easy to work with.
This property, combined with its binding power, allows for the creation of unique textures, such as shortbread, edible powders, tuiles and dried fruit, whilst retaining the original flavours.
