A truly great find!
Also known as Loomi, these black limes from Iran are actually limes boiled in salt water then dried in the sun over banana leaves for several weeks, giving them colours between light-tan to dark brown.
The taste is similar to lime but surprisingly sweeter with subtle smoky notes.
These dried limes can be used grated, chopped or infused and pair well with poultry, seafood, fish and particularly desserts.
Keep away from direct light and humidity.
Close the lid after each use to ensure the tub is airtight.
