Buckwheat seeds ("soba" in Japanese) are usually infused and make a very pleasant hot drink, caffeine-free and calorie-free, with a sweet, rounded, slightly toasted hazelnut flavour.
They can also be used in pastry recipes.
This sobacha is made by the Nikkoku company, founded in Nagano in 1945, which specialises in buckwheat-based products (seeds, pasta, flour, etc.).
Dosage:
Two teaspoons to infuse for 1 to 2 minutes in hot water.
For lattes, or to flavour rice, the dose is to taste.
