Ferme du Gros Caillou's apple balsamic vinegar is made from 100% Normandy apples: a blend of concentrated apple must and cider vinegar.
The mixture is slowly reduced in a cauldron over the course of a month.
No sugar or colourings are added.
This recipe is enhanced with Red Sichuan pepper grown in Normandy, which adds floral and citrus notes.
The spicy freshness and sweetness of the apple combine to enhance summer salads, meats or desserts.

The Normandy Red Sichuan Apple Balsamic Vinegar from La Ferme du Gros Caillou was awarded an Epicure d'Or in March 2026 in Paris, in the Vinegars and Dressings category.
This adds to the other awards received in previous years for Velours Balsamique and La Magnifique, an apple balsamic mustard.
