Chef Philippe's recipe idea: Scallops, cep mushroom and Chardonnay cream sauce
6 scallops with roe
50g cep powder
2 garlic cloves
4 tablespoons crème fraîche
1 knob of butter
Fleur de sel, Malabar black pepper
Peel and chop the garlic clove.
Fry it in a frying pan with the crème fraîche, porcini mushroom powder and white wine. Leave to reduce for a few minutes over a low heat.
Fry the scallops in butter for 30 seconds on each side over a high heat.
Then pour the sauce over the scallops.
Serve with basmati rice.
