Inspired by a traditional Indian spice blend (Vadavam) from the Pondichery region where France colonial influence is still felt, Vadouvan is a popular interpretation with French ingredients such as garlic and grapes.

Vadouvan is a versatile spice blend that pair very well with sauces, seafood and shellfish, fish, poultry, vegetables, etc. It is also a great addition to coconut milk and sweet and savoury recipes.

Chef Philippe's tip: Use Vadoovan with pan-fried mussels and coconut milk... delicious!
