Black garlic is candied slowly in sea water at low temperature.
Its taste has nothing to do with standard garlic. The natural candying process gives the garlic a flexible, tender texture.
The flavour is more subtle with notes of balsamic.
These whole garlic cloves are a great addition to hot or cold preparations: sliced, ground or incorporated in a sauce, black garlic will surprise you.
Pairs well with fish, seafood, white meat and vegetables.
In pastry, black garlic also makes a great association with chocolate and red berries.
