Alpaco 66% dark chocolate is a chocolate from the Grands Crus Pure Origine range, made from Arriba cocoa beans, an emblematic variety from Ecuador.
Local producers have ancestral know-how and perfectly master all stages of processing with short fermentations thus preserving all the qualities of the cocoa.
This fine and aromatic Alpaco couverture stands out with its notes of sweet spices and its woody taste of dried fruits.

Applications:
Alpaco beans are recommended for coatings, moldings, bars, mousses, ganaches, creams, ice creams and sorbets.
Perfect pairings with grapefruit, hazelnut, lime, lychee, cinnamon, coffee, gingerbread, vanilla, caramel, licorice.
Tempering curve: Cast iron (50/55°C), Crystallization (28/29°C), Work T3 (31/32°C)

  • Storage: dry and temperate room: humidity less than 70%, temperature 17-18°C.
