Gelcrem Hot is a heat-activated thickener made from maize starch.
It develops a smooth, uniform and stable texture, ideal for preparations requiring cooking.
It offers high resistance to heat and baking, without any loss of thickening power, making it suitable for demanding recipes such as custards, flans or hot sauces.
It is also freeze-stable, allowing preparations to be made, frozen and then thawed without any change in texture.
Applications:
The dosage generally varies between 20 and 50 g per litre, depending on the desired texture.
It is compatible with all types of liquids (water, milk, juice, stock), and its neutral taste allows the flavours of the ingredients used to be fully preserved.
It must be stirred into a liquid whilst cold, then activated by heat, generally between 90 and 130 °C.
